Chicken Vegetable Stir Fry made from Freeze Dried Food

Whenever I look through recipes, minimal prep time is VERY important. This stir fry took about 2 minutes to prep...just rehydrate the food and fry it.
But, I want to talk about the CARROTS! 

 
Carrots lose their color during the freeze drying process so, at this point, Thrive only has dehydrated carrot dices...these require 10-15 minutes of boiling to regain their shape.  Always looking for cooking shortcuts, I ground up the dehydrated carrots in my coffee grinder and poured boiling water over top to make a carrot puree. That, in itself, tasted really good!


I added about 3 tbsp of carrot puree to rehydrated FD chicken, FD green beans, FD corn, FD cauliflower, and dehydrated onion....and a dollop of coconut oil....and stir fried for about 3 minutes. Then I added about 3 tbsp of almond butter, and it turned into a really nice topping/sauce.
